Our Product
The steelhead trout are grown responsibly in an offshore platform called the AquaFort. This integrated multi-trophic aquaculture system cultivates steelhead trout, blue mussels and sugar kelp. The lower trophic shellfish and seaweed species are suspended around the fish nets to extract nutrients from the fish. This approach reduces nutrient inputs to the environment. Juvenile trout are purchased from Sumner Brook Trout Farm in Ossipee, NH and transferred in October to the AquaFort at a mean weight of 300 grams. They are grown for 7 months and harvested the following spring. This last run, we saw trout over 10lbs with an average of 5-6lbs. The smoked trout are vacuum sealed and frozen, and can be kept frozen until July 2025 for best taste. The fillets should be enjoyed within 30 days once thawed for best taste.
